New pizza place opens in Park Royal Mall

A new Pizza Rubato location opens at Park Royal this March, bringing Neapolitan-style pies, wood-fired panuozzos, and Sicilian cannoli.

A new pizza spot is coming to Park Royal Mall this March, as Pizza Rubato prepares to open its latest location in West Vancouver.

The restaurant, founded by Ahmet Turunç, specializes in Neapolitan-style pizza made from a 300-year-old recipe. Turunç says the concept is deeply personal — inspired by memories of his mother’s wood-fired bread. “Pizza is more than just a quick meal; it’s a deep connection to my childhood each time I fire up the oven,” he says.

The new location at 701 Park Royal North will seat more than 50 guests across 2,000 square feet. Turunç says the area was a natural fit. “We are so excited to be joining the Park Royal community, where sharing great food with family is such a core part of lifestyle in that area.”

According to the press release, the menu will feature Pizza Rubato’s signature pistachio pesto pizza alongside new offerings like Cacio Parma and Nduja Potato. The location will also serve wood-fired panuozzos and, in a new partnership with Cannoli King Bakery, authentic Sicilian cannoli as a permanent menu item.

The restaurant’s name is a nod to its culinary philosophy, as “rubato” is a musical term for a rhythm that bends tempo freely. At Pizza Rubato, that means staying rooted in Italian tradition while experimenting with bold new flavour combinations, the press release noted.

At Pizza Rubato, every dough goes through a 48-hour fermentation using premium 00-type flour before being hand-spun and baked in a brick oven.
